Greek Salad Recipe for William by Colleen

Hi Barb--

William* has discovered that he loves Greek Salad. I made it while cousin Tom was visiting us. You probably already have a recipe, but if not, I'll forward mine. Although Greek Salad does seem to be like chocolate chip cookies - everyone has a recipe and they are all similar but not exactly the same. I'm going to type it up for William.

*Note from B:  William is our nephew who is going off to college in the fall.  I agree --Greek Salad is a good recipe for someone learning to cook on their own.  It's a classic.

Greek Salad


1 1/2 cups cherry tomatoes
2 red bell peppers, seeded and cut into bite sized pieces
1 English cucumber, peeled, quartered and cut into pieces
½ red onion cut into thin slivers
1 package crumbled Feta cheese
½ cup pitted Kalamata olives, cut in half
1 Tablespoon lemon juice
1 Tablespoon red wine vinegar
2 Tablespoons olive oil
1 clove garlic, minced or pressed in garlic press
salt and pepper to taste.


Wash, clean and cut up the veggies. Put in bowl and add the cheese and olives. You can either make the dressing separately (whisk together the olive oil, lemon juice, garlic, S&P and vinegar) or you can just add these ingredients to the bowl with the veggies and toss it all together.

When it is all mixed together, taste and adjust seasonings to your preference. The feta and olives add a lot of salt, so go easy on the salt until you have tasted everything mixed together. And depending on the tartness of your lemon, you may need to add a bit more lemon juice or vinegar to get the right “bite” of acid.
