Green Tomato Chocolate Cake by Christine
I used my green tomatoes to make this recipe. Interesting flavor. It definitely needs icing though. I baked mine in a 13 x 9 pan. Texture is very light and fluffy.

Green Tomato Chocolate Cake
Makes a 9 x 13 inch cake
Makes a 9 x 13 inch cake
1 c. green tomato puree (2-3 tomatoes)
2/3 c. butter
1 3/4 c. sugar
2 eggs
4 oz. unsweetened chocolate, melted
1 tsp. vanilla
2 1/2 c. unbleached flour
1/2 c. cocoa
2 tsp. baking powder
2 tsp. baking soda
1/4 tsp. salt
1 c. beer
Preheat oven to 350 degrees.
Add puree to 1/2 of the dry ingredients. Mix and add to cream mixture in mixing bowl. Mix well. Then add the rest of the dry ingredients.
At last add the beer.
Blend well.
