Easy Palak Paneer (Creamed Spinach and Cheese)

(Creamed Spinach with Farmer Cheese and Indian Spices)

After a quick round of golf Sunday with our son-in-law, Chris, and David watching and advising, we came back to the house and found Barbara making Chicken Tikka Masala.  The plan was to compliment this dish with creamed spinach. 

But being ever the adventurous cook, I decided to see if there was simple way to turn creamed spinach into a palak paneer Indian dish.  Palak paneer is one of our favorites whenever we go to an Indian restaurant. It is a flavorful, mild spinach with cheese dish.

I found several recipes and thought I could easily adapt one to our liking.  The result was terrific.  Very tasty and worthy to go along with Barbara's very tasty chicken tikka masala.  This is a very simple and quick recipe.

Palak Paneer (Shortcut)
2 packages of frozen creamed spinach
6 ounces of cheese curd or large chunk cottage cheese or Indian palak cheese, cubed
1 tablespoon butter
3/4 teaspoon chili powder
1/2 teaspoon coriander
1/2 teaspoon turmeric
1/2 teaspoon garam masala 
 

Microwave spinach per the package instructions.
Once completed. open the pouches and combine the two spinaches into an appropriately sized bowl. Add the  spices, cubed cheese, and butter.  Stir until everything is well incorporated together.
Reheat for 30 more seconds and stir thoroughly again.

It is now ready to serve.  Is this an easy recipe, or what!
