Blueberry Muffins with Granola Topping from Bridget

Granola Sprinkled on Top

This is a simple muffin recipe I found online, then I added cardamon powder and sprinkled granola on top---a simple trick I came up with to make the tops look fancy.

Best Blueberry Muffins

Makes 12 MUFFINS

  • 1 large egg
  • 1 cup milk
  • 1/2 cup canola oil
  • 2 cups all-purpose flour
  • 1/3 cup granulated sugar
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 1/4 t. cardamom
  • 1 tsp vanilla extract
  • 1 1/2 cup blueberries
  • granola for topping (about 3/4 cup)
  1. Preheat the oven to 400 degrees. Line a 12-slot muffin tin with muffin papers.
  2. In a large bowl, beat together the egg, milk and oil. Add the flour, sugar, baking powder, cardamon, salt and vanilla extract. Stir until combined. Add the blueberries and mix to combine.
  3. Divide the batter evenly among the 12 muffin cups.
  4. Bake for 18-22 minutes, until golden and a cake tester inserted in the center comes out clean.
  5. Let cool slightly before serving.
