Blueberry Muffins with Granola Topping from Bridget
Granola Sprinkled on Top
This is a simple muffin recipe I found online, then I added cardamon powder and sprinkled granola on top---a simple trick I came up with to make the tops look fancy.

Best Blueberry Muffins
Makes 12 MUFFINS
- 1 large egg
- 1 cup milk
- 1/2 cup canola oil
- 2 cups all-purpose flour
- 1/3 cup granulated sugar
- 1 tbsp baking powder
- 1/2 tsp salt
- 1/4 t. cardamom
- 1 tsp vanilla extract
- 1 1/2 cup blueberries
- granola for topping (about 3/4 cup)
- Preheat the oven to 400 degrees. Line a 12-slot muffin tin with muffin papers.
- In a large bowl, beat together the egg, milk and oil. Add the flour, sugar, baking powder, cardamon, salt and vanilla extract. Stir until combined. Add the blueberries and mix to combine.
- Divide the batter evenly among the 12 muffin cups.
- Bake for 18-22 minutes, until golden and a cake tester inserted in the center comes out clean.
- Let cool slightly before serving.
