Don't Tell Roasted Potatoes

Guests can never guess what's in these roasted potatoes that makes them extra good. It's one of our most frequently requested recipes. Use your favorite potatoes and cut them into bite size pieces.

You'll need this secret ingredient.Mix together thyme, olive oil, garlic, and the secret ingredient, then toss in the potatoes and coat thoroughly.

Spread them out in a single layer and roast at 400 or 425 degrees for about 35 - 40 minutes. Stir mid way if you are so inclined.

First made these for a dinner party, using a recipe from Bon Appetit, back in August, 1990, and many, many times over the years.
