Easy Tortellini Soup

Easy Tortellini Soup

You can make a quick, delicious, nutritious soup that even kids will love when you combine these five ingredients:
  • an onion
  • carrots
  • stock
  • fresh or frozen tortellini
  • greens, e.g., spinach
Today I made it for lunch ---with chicken stock, Wegman's cheese tortellini, a sweet onion, 3 carrots and baby spinach/beet greens.

Wegman's carries a variety of tortellini --- cheese or chicken or meat, etc. ---they freeze well --- and you can buy any greens  --- spinach is my favorite --or add what you have on hand --- even odds and ends of lettuce work well.
Chop the onion and saute it in a little olive oil on medium while you scrape the carrots and chop them into bite sizes --- either matchstick or little cubes.  Be sure to cut the carrots small enough so they will cook in the short time required for this soup.  Then put them in pot, too.  Add 64 ounces of chicken stock. 

Bring the liquid to a boil --- a vigorous boil --- then add your tortellini and greens --- and cook until the tortellini are done --- between 5 and 12 minutes depending on whether or not they are frozen and how quickly the liquid comes back to a simmer. 

Adjust the seasoning and serve.  You can add grated cheese on top, if you wish. 

Other options would be a vegetarian version, using goat cheese tortellini, and vegetable stock.  Or a meat lover's version with beef stock and pork tortellini.  fyi --The tortellini also comes in tricolor which makes a more colorful version of this soup.
