Summer Green Beans with Sesame Oil and Toasted Sesame Seeds

Aromatic Sesame Oil with Toasted Sesame Seeds

Green beans are abundant --and so delicious ---during July here, but I am always looking for ways to make them interesting.  This is a very simple way to add lots of flavor.

Green Beans with Sesame Oil

Serves 4

1 quart fresh green beans, washed and ends snapped off
salt
1 t. sesame oil*
toasted sesame seeds for garnish

Cook the green beans until crisp tender.  I prefer to place them in a wide saucepan with a couple of tablespoons of water, salt them, cover and cook on medium for 8 minutes to let them steam, and then remove the cover and cook until crisp tender, about 4 more minutes.  Most of the time, the water evaporates so watch them carefully in the last few minutes.  

Remove the green beans from the saucepan, and place in a serving bowl.  Drizzle with the sesame oil, taste, add more salt if needed, then garnish with toasted sesames seeds.

* be sure to use fresh sesame oil
