Freezing PBJ sandwiches by Barbara




 I’ve been experimenting with freezing PBJ sandwiches so that I have something healthy on hand to pull out of the freezer rather than resorting to sweets for a midday boost of energy. 

The trick is to put peanut butter on both sides to form a barrier for the jam to minimize soggy bottoms. 

Also to avoid freezer burn, and to keep them from sticking together, I place the sandwiches in plastic bags and stack them back into the original bread bag. 

So save the twisty tie that comes with the bread. 

One loaf usually makes seven sandwiches, one for each day of the week. 

I prefer Arnold’s Oat Bread with Jif  crunchy Natural Peanut Butter with Bonne Maman Strawberry jam but today I used whole wheat with Jif smooth and a special cherry jam we bought in Niagara on the Lake. 
I reheat in the toaster on an aluminum-foil-lined tray at 325 for 8 minutes but you can just pull one out and let it defrost. They are great to take as a “meltdown” option. Put one in your purse for emergencies if your sugar level gets low when you are out and about.
