Lentil Soup (Stephen & Evie Colbert) by Barbara

Last night I made another good recipe from the new Stephen and Evie Colbert's family cookbook, Does This Taste Funny?

I normally wouldn't go out of my way to make a lentil soup but I had a bag hanging around in the pantry and they said it was one of their "go-to" recipes from a cookbook in the 80's.  Those are usually very good recipes, tried and true.  

It was delicious.  The only change I made was to use dry sherry instead of dry white wine, plus I added some leftover cooked wild mushrooms.  Otherwise I stuck to their recipe and instructions, so I thought I’d just post it as is.  I often write notes in my cookbooks, the date we made it and any substitutions, what we liked or didn't like.  Things like that.  

Here's the recipe. (I am just posting a photo of it because I didn't make many changes.

We added cheese as they suggested and served it with a hot French-style roll.  We didn't make garlic croutons or add any hot sauce.

fyi -  It made a HUGE batch. Good thing I started with a 6 quart pot.  It was filled to the brim. 
After serving it, I separated it into 4 one-quart containers to freeze.  Will be good to have on hand.
