Quick Chicken Tikka Masala by Barbara
For a quick meal when I am in the mood for Chicken Tikka Masala, I buy a jar of ready-made sauce and doctor it by adding onions, diced tomatoes, curry powder and spinach. You could add yoghurt, too.
I've also posted a Cook's Illustrated version of Chicken Tikka Masala back in 2010 if you want to make it from scratch. It's a very good recipe if you have the time to make it.

Quick Chicken Tikka Masala
Serves 6
3 chicken breasts, cut into chunks
2 sweet onions, sliced into crescents
olive oil
1 T. sweet curry powder
1 can diced petite tomatoes
A handful of golden raisins
1 jar store-bought Tikka Masala sauce
A handful of spinach leaves, pre-washed
Salt
Fresh cilantro, washed and chopped, for garnish
In a large deep sauce pan with a lid, on medium heat, add olive oil and saute onions until translucent, about 3 to 5 minutes. Do not let brown.
Add the chicken pieces, then sprinkle the curry powder over the top, and stir until coated and you can smell the fragrance of the curry powder.
Add the diced tomatoes, including the juices from the can, and a handful of golden raisins.
Add the Tikka Masala sauce and stir together.
Cover and turn the heat down to low, and simmer for 20-25 minutes or until the chicken is cooked through.
Stir in the spinach until it is wilted.
Add salt to taste.
Serve over rice with lots of cilantro on top.
