Cauletti, Red Pepper, and Mushroom Veggie Roast by Barbara


This is one of our favorite combinations of veggies to roast together.  Red peppers, mushroom and cauletti.  If you haven't tried Cauletti yet, it is a brand name for a variety of baby cauliflower. It has long, tender stems and looser florets, giving it a milder, sweeter flavor than traditional cauliflower. We roast the veggies along with chicken.  Also goes well with baked salmon.

Cauletti, Red Pepper, MushroomVeggie Roast
1 red pepper, washed, seeded and cut into strips
1 bag of cauletti, pre-washed
12 - 15 mushrooms, brushed off, and stems trimmed
Olive oil
salt and pepper

Preheat the oven to 350 degrees.

Drizzle olive oil in the bottom of a roasting pan.  Sprinkle salt on top.

Add the veggies.  

Drizzle with more olive oil and add salt and pepper.

Toss them together to coat with the olive oil, and then spread out in one single layer.

Place in the lowest level of the oven, nearest the heating element.

Roast for 30 minutes.
Serve with roasted chicken.
