Ginger Butternut Squash Soup by Barbara

 

I have resumed "Soup of the Week" by starting with this is oldie but goodie recipe from the earliest days of Feast Everyday, January 2009 which I republished in 2012 using Delicata.  You can use either Butternut or Delicata squash.  
It's a healthy soup.  Simple to make.  A Bob Greene recipe.  He was popular back then because he was Oprah's trainer and he wrote a cookbook.  
It's a good soup to make this time of year, in the Fall, because in the stores, fresh ginger is tender and mild, and there is abundant butternut squash, and at home, the chives have replenished themselves in the cooler weather.  Makes a big pot of soup.  We have it for dinner the first night, then I portion it out into containers for lunches during the week.
