Chocolate Chip Banana Bread by Barbara


Do chocolate chips and banana bread go together? Yes! This was an experiment. I was pleasantly surprised. 

This is a lovely recipe for whole wheat banana bread. I found it on the back of a bag of whole wheat flour from King Arthur. (Chocolate chips are my addition.) I was intrigued by the order the ingredients are added to the recipe. Eggs and honey go in after the bananas. The result is a very moist tender bread. I will definitely make this bread again.

Chocolate Chip Whole Wheat Banana Bread
(adapted from King Arthur flour)

Makes 1 loaf 

8 tablespoons butter, room temperature
1/2 cup brown sugar, packed
1 teaspoon vanilla extract
3/4 teaspoon baking soda
3/4 teaspoon salt
2 cups mashed banana (5 medium)
1/4 cup honey
2 large eggs, room temperature
2 cups King Arthur whole wheat flour
1 cup semi sweet chocolate chips

Preheat the oven to 350°.

In a stand mixer, cream together, butter, and sugar until smooth. 

Add vanilla, baking soda, salt, and mashed bananas, beating until well combined.

Beat in honey and eggs.

Remove from stand. 

Fold in flour then chocolate chips, stirring until smooth. 
(Use a spatula for this, not the stand mixer. )

Grease a 9" x 5" pan.  Spoon batter into lightly greased pan.  Press batter into corners and smooth the top.  

Let rest for 10 minutes before baking.

Bake for 50 minutes, then lay a piece of aluminum foil across the top to prevent over browning. 

Bake for an additional 10 to 15 minutes then remove from oven; a toothpick inserted into the center should come out clean.

Allow loaf to cool for 10 minutes before transferring to rack to cool completely. 

Store room temperature well wrapped for several days.
