Just baked a batch of these banana bread muffins and updated the recipe. It’s become one of my “go to” recipes. I always seem to have ripe bananas that need to be used. Muffins are more convenient than baking a banana bread in a loaf pan. We can pull two at a time out of the freezer to have with coffee in the morning.
